A key enabler of sustainable purchasing is the ability to evaluate costs, impacts, and benefits of alternative processes or products. A big challenge, however, is how to gather comparable data that helps build a persuasive case. If you can find ways to show that preferred alternatives concurrently deliver economic, environmental, and social benefits, then the “triple-win” can much better substantiate arguments for change. Drawing from a comprehensive analysis of cleaning chemical use at two of the highest throughput kitchens in the world, Ecolab and MGM Resorts will share at this session how they collaborated to gather total costs, impacts, and benefits of two different product systems, and effectively engaged stakeholders to secure early buy-in. Participants will hear how the case study led to comparable results, summarized learnings, and a clear direction for product and process selection based on a comprehensive understanding in all three areas of sustainability.
